Ingredients:
Cooking Oil (I like Primal Kitchen's Avocado Oil found here, or a good solid EVOO).
Two bunches of Sweet Baby Broccoli
1/2 yellow onion
2 bunches of King Oyster Mushrooms (or any other available mushroom)
Pink Himalayan Salt
*Select Organic when possible!
Directions:
Grab a decent sized skillet (preferably stainless steel or cast iron - avoid non-stick!) and drizzle a generous amount of oil across the pan. Allow pan to heat up a bit on medium heat.
Chop onions, broccoli, and mushrooms to the size you prefer! Add to pan and mix in with oil, and add a few dashes of salt. Cover and simmer for 20 minutes.
Mixture is ready when you start to see the colors deepen and mushrooms become soft.
Serve!
